~ I must compliment Mr. Gregory Polino who is your Restaurant Manager. I lack words to describe this unique gentleman! He runs the restaurant in a fashion comparable to the best that are found in France. The Buffet Breakfast on the weekend was a work of art. Not only was the food impeccably delicious but the manner and organization of the service was incredible! Everything functioned perectly and his staff was there to assist at any moment. As well to cater to the very large number of diners is certainly not an easy task indeed. This did not happen by accident and my proverbial hat is off to Gregory. In a like manner the evening meals were first class. It was a pleasure to sample the food which in every way was comparable to the best that Paris has to offer. His assitant Maxime Bonvoisin was also unbelievable. He worked in a syphonic harmony with Gregory, a sight so pleasant to behold. The waiter Carlos Qiza was excellent and most attentive.

Very impressive personality... Our talks with [the restaurant staff] gave us a greater insight into the life and culture of Miami and Florida.
